Tomato Cucumber Salad

So did you know that a two-year-old child is known as “terrible”? Yes, my two-year-old son has broken the mold because I would love to keep it at this age forever. I was a little obsessed with the “stage” he was facing.

He is my friend when we cook together, he always helps me at the kitchen table, and when I use my face and decorate his hair, he always helps me in the bathroom. He always praised me as “you or beautiful” or “you are the best or EVA!”.

I did not do that. He is fun and loving. He told me when I was tired, ready to take a nap or want to sleep. His favorite snacks are avocados and avocados. He is the best.

One day I made a salad, and like most things I did, begged to help me at the kitchen table. “Help” is relative because I try to make a salad, then put cucumber and tomatoes in my mouth.

My kids don’t like all the vegetables, but they like cucumbers and tomatoes. I think they got it from me because these two things might also be my favorites.

When I was young, my grandfather had a beautiful garden, and throughout the summer, my family was the winner of Happy Garden of TONS. Tomatoes and fresh garden cucumbers are the perfect paradises! For anyone who doesn’t like tomatoes (man … I’m talking to you, husband!)

I am sure they are not exposed to fresh tomatoes and gonorrhea. There is something better! My mother will make all this power. It’s time to use our new garden products. Simple, but the fresh taste and crisp texture make me drool.

Ingredients

  • 2 cups cherry tomatoes , halved
  • 3 teaspoons olive oil
  • 5 mini cucumbers , sliced into 1/4” coins
  • 2 Tablespoons red onions , diced
  • salt and freshly ground black pepper , to taste
  • 1 teaspoon red wine vinegar
  • 2 Tablespoons fresh basil leaves , chopped

Instructions

  1. Add cherry tomatoes and cucumbers to a bowl.
  2. Drizzle olive oil and vinegar on top. Season with salt and pepper.
  3. Toss everything to coat. Garnish with diced red onion and fresh basil.
